All guides at Jesse’s trout lodge are well known locals and have a lifetime of experience fishing for speckled trout and red fish in the Deltas, Rivers, and bays of south Alabama. Jesse’s is a family run business that enjoys a family atmosphere.

Captain's Tips

When booking a trip with any salt water inshore fishing guide, it is important to know that although in South Alabama, we have year round Speckled Trout fishery, some days of the month are better than others.  Coastal fish are greatly affected by the water movement that is caused by tidal flow.  Stronger tides create more water movement, generally making fish bite better.  So, the next time you get ready to go fishing, try to plan your trip around a strong tide.  If you follow this one rule, you will definitely have better fishing.

RECIPE:  Jesse's Baked Oysters

2 sticks real butter
1/2 gallon oysters
2 Tbsp. minced garlic
2 Tbsp. jalapeno peppers - chopped
grated parmesan cheese
2 Tbsp. Worcestershire sauce
1 Tbsp. hot sauce
Tony Chacker's seasoning to taste
salt and pepper to taste
 
Melt butter in saucepan. Add minced garlic, peppers, Worcestershire and hot sauce. Saute for 3 minutes.  Put strained oysters in baking pan.  Pour sauce over top.  Bake at 450 degrees for 10 minutes.  Top with parmesan cheese.  Put back in oven until cheese melts.  Serve on small slices of toasted garlic bread.  8 servings.
